- 1/2 lb Bayley Hazen, Raw Cow- Blue, Jasper Hill Farm (VT). A fudge-like texture with flavors of sweet cream and hints of toasted nut.
- 1/2 lb Barnburner, Thermized Cow- Cheddar, Grafton Village Cheese Company (VT)/Crown Finish Caves (Brooklyn, NY). Made at Grafton Village Cheese Company and aged at Crown Finish Caves in Brooklyn; Cold smoked, then larded and bandaged using lard from Marlow and Daughters butcher shop in Brooklyn. Smokey, meaty with a slight sweetness. Delicious.
- 1/2 lb Reading Raclette- Raw Cow- Alpine-style, Spring Brook Farm (NY). Semi-firm and washed in a saltwater brine during maturation of between 3-4 months; a melt-in-your-mouth texture with milky and fruity flavors. Great for melting!
- 1 Mini-Button Kunik (.25-.33lb)- Pasteurized Goat and Cow- Soft Triple-creme, Nettle Meadow Farm (NY). Bloomy-rind goat milk cheese with the addition of cow cream; characteristically lemony, "goaty" flavors with the fatty richness of Jersey Cow milk gives a perfect balance. Think of a savory cheesecake!
